Vinification and refinement This wine is produced from Ciliegiolo (cee-lee-a-jo-low aka “cherrygrape”) grapes grown in the low-yielding organic vineyard of the Tenuta Santa Lucia on coastal Tuscany near Pisa. Following the old traditional vinification method, completely mature grapes are harvested from vineyards and crushed almost immediately. Afterwards the grapes are poured in large inox tanks for fermentation. The primary fermentation evolves at a controlled temperature for approx. 15 days. When the primary fermentation is perfect, the wine is filtered and stored at constant temperature in oak barrels for a minimum period of 12 months, in order to obtain warmer tones and colours.

Wine description Colour: Deep ruby red in colour. Bouquet: Rich spicy perfumes and black pepper notes with a hint of raisins. Taste: Full body balanced taste, very intense and spicy with sweet cherry flavours.

Curiosity Ciliegiolo is a variety of red wine grape from Italy, named after the Italian for 'cherry'. It is a minor component of traditional blends such as Chianti, but interest has revived in recent years.
